My mother is a fantastic cook, and always has been. I feel lucky that I grew up with a parent that cooked for me. The dish she makes better than anyone, and which I remain nostalgic for from my childhood, is Teriyaki Chicken. She would make it in a wok, which is a huge difference from a flat pan because after the onions and the garlic have had some time in the oil at the bottom, you can move them to the side as you cook other ingredients in the meal. Nothing gets bitter. The other thing that makes the dish outstanding is the Yoshida Teriyaki Sauce; I honestly don't know if it is still available. It wasn't too sweet and it wasn't too salty, and that little bit of sweetness with the tang of the garlic and the crunch of the pea pods and the moistness of the chicken-she just did it perfectly every single time. It is a dinner that NEVER had leftovers, and it is a dish I never order out because I don't want to have it ruined for me; I know that a reproduction just will not measure up.
